Cookie Dough Ingredients

  • 2 sticks of softened butter
  • 1 ½ cups of sugar
  • 2 large eggs
  • 2 ¾ cups of flour
  • 2 teaspoons of cream of tartar
  • 1 teaspoon of baking soda
  • ¼ teaspoon of kosher salt
  • 2 Tablespoons instant coffee 

While other cookie recipes, like sugar and chocolate chip, typically do not call for cream of tartar, do not think of skipping this ingredient. Cream of tartar is the secret ingredient in Snickerdoodles that makes the cookies so soft.

This particular Snickerdoodle recipe calls for instant coffee. The amount used in this recipe will give the cookie a faint taste of coffee. If you want a strong flavor of java, then you may want to add another tablespoon of instant coffee to the cookie dough mixture.

Instructions

Start the process of making the Snickerdoodles by preheating your oven to 400 degrees and covering a sheet pan with either a silicone baking mat or simple parchment paper. Place the sheet aside while you make the cookie dough. Next, in a large mixing bowl, you will mix the softened butter, one and a half cups of sugar, and the eggs until well combined. In another bowl, whisk the flour, cream of tartar, baking soda, salt, and instant coffee.

Then, you will slowly add the dry mixture in with the wet ingredients. Make sure that everything is stirred together well. At this point, you can choose to chill the cookie dough for an hour or even overnight. After the cookie dough has properly chilled, you will stir the cinnamon and two tablespoons of sugar in a small bowl. Take about a large tablespoon of the dough and roll it in your hands to make a ball that is about an inch wide. You will keep making one-inch balls until there is no more dough left. Roll the balls in cinnamon sugar and place on the baking sheet. Bake the cookies for 8 to 10 minutes. Serve the cookies while warm and enjoy!
